Wyeast 3724 has a reputation that precedes it in homebrewing circles: it's the strain most associated with Brasserie Dupont's house yeast character, prized for genuinely distinctive Belgian saison flavour, and also widely known for a real, well-documented tendency to stall partway through fermentation — sitting at an unfinished gravity for days or weeks with little visible activity, testing the patience of brewers expecting a normal two-week fermentation timeline.

Why it stalls, and the standard fix

3724 seems to need sustained warmth to complete its work, more so than most ale strains — a fermentation that starts around the low-to-middle of its 68-85°F range and stays there can genuinely stick well above its target final gravity, while the same batch given a deliberate temperature push into the upper 70s or even low 80s partway through often restarts and grinds on toward completion.
