Fermentis US-05 is one of the most widely used dry ale yeasts in homebrewing — a clean, neutral American ale strain that produces minimal fruity ester character even at the warmer end of its fermentation range, which is exactly why it's become a reliable default for brewers who want the malt and hop character of a recipe to speak for itself rather than being shaped by a distinctive yeast fingerprint.

Attenuation and fermentation range

US-05 typically attenuates 78-82%, a solidly high range that produces a dry, crisp finish well suited to hop-forward styles where residual sweetness would compete with hop bitterness rather than complementing it. Fermentis publishes a fermentation temperature range of roughly 59-75°F (15-24°C); most homebrewers targeting the cleanest possible result ferment toward the lower-middle of that range (around 66-68°F), since warmer fermentation temperatures — even within the "acceptable" published range — tend to coax out more ester and fusel character than the strain shows at cooler temperatures.
