Wyeast 2206 (Bavarian Lager): Built for Bock and Oktoberfest

Wyeast 2206 rounds out Wyeast's set of German-tradition lager strains alongside 2007 (Pilsen Lager), positioned specifically for maltier, richer styles — bock, Oktoberfest/Märzen, and helles — rather than the crisper, more hop-forward character 2007 is built around.

At 74-79% attenuation, matching 2007's range, 2206's real distinguishing trait is its flavour contribution rather than its numbers: a rounder, more overtly malty character that suits styles built on Munich or Vienna malt bases rather than the neutral Pilsner-malt canvas German pilsner uses. The same core lager-yeast handling rules apply — true cold fermentation, adequate pitch rate, sulfur production that's normal rather than alarming, and extended cold conditioning afterward to fully round out the beer's character before it's ready to serve. Medium flocculation means it clears at a fairly ordinary pace once that conditioning period has actually run its full course. Brewers building a traditional Oktoberfest recipe around Munich and Vienna malt often treat 2206 as close to a default choice specifically for how well it complements that particular malt bill. Helles, a paler and more restrained relative of bock and Oktoberfest, also suits 2206 well, since the strain's own malt-forward character rounds out helles's simple, minimal grain bill without needing any extra specialty malt to compensate for it.
