At 69-73% attenuation, 2000 finishes at a similarly moderate gravity to 2124, and it shares the same real lager-yeast traits: noticeable sulfur production during active fermentation that fades with time, a genuine need for true cold fermentation temperatures rather than a warm-lagering shortcut, and an expectation of extended cold conditioning afterward. Czech (Bohemian) pilsner is its clear home; brewers specifically chasing Budvar-adjacent character over a more generic Bohemian profile are the ones most likely to reach for 2000 over 2124. Medium flocculation gives it reasonably ordinary clearing behaviour once the extended cold-conditioning period this whole strain family relies on has had adequate time to do its work properly. As with any classic lager strain, a healthy pitch rate matters more here than it would for a comparable ale fermentation, since the lower fermentation temperature slows the yeast's own reproduction and leaves less margin for an underpitched batch to recover cleanly.
