CaraPils / Carafoam: The Crystal Malt That Isn't a Crystal Malt

The "cara" in CaraPils suggests crystal or caramel malt, and that naming has confused generations of new brewers, because this isn't a caramel malt at all — it's a dextrin malt, kilned lightly enough that it develops almost no colour and none of the toffee or dried-fruit character actual crystal malt produces. The point of CaraPils (a Briess trademark) and Carafoam (its Weyermann-branded equivalent, functionally the same product category) is body and foam, not flavour or colour.

What it actually does

CaraPils/Carafoam is processed to leave behind a high proportion of unfermentable dextrins — longer-chain sugars that survive fermentation untouched — which thickens a beer's body and, critically, contributes protein material that supports a denser, longer-lasting head. It gets there through a different heat process than the stewing that produces real caramel malt, which is why it stays so pale despite sharing the "cara" naming family with malts that are anything but pale.

Why brewers reach for it

A beer that's clean and dry-finishing from a high-attenuation yeast strain or a simple grist can end up thin-bodied and quick to lose its head — CaraPils/Carafoam addresses both at once without adding sweetness or altering flavour balance, which makes it a common addition to light lagers, pale ales, and any recipe where a brewer wants a fuller mouthfeel and better foam stability but doesn't want the beer to read any sweeter or darker.

Colour, for the record

At 1-3 °Lovibond, its colour contribution is close to negligible even at a full addition. Enter 1 lb (0.45 kg) of it and 9 lb (4.1 kg) of pale base into the SRM colour calculator for a 19 L (5 gal) batch and the answer is about 3.6 SRM — barely different from an all-base-malt batch at the same weight, underlining that colour was never the point.

No diastatic power, and why that matters more here than usual

CaraPils/Carafoam contributes no diastatic power, same as every other malt in the broader "cara" family, and needs a base malt with enough enzyme margin to handle the whole mash. Because it's often added specifically to beers already built on a clean, highly-fermentable base grist, brewers sometimes layer it into a recipe without double-checking that the base malt's enzyme content still comfortably covers the full grain bill — usually a non-issue with a standard base malt at typical percentages, but worth confirming in an unusually adjunct-heavy recipe.

The overuse mistake

Because it doesn't add sweetness or colour, CaraPils/Carafoam feels "safe" to overdose relative to a real crystal malt, and some brewers push well past the conventional 10% ceiling chasing more body. Past that point, the unfermentable dextrin load can leave a beer noticeably heavier and stickier on the palate than intended, without any of the flavour complexity that would normally come with that much specialty malt — a genuinely different kind of overuse mistake than oversweetening with actual crystal malt, but a mistake all the same.

No true stand-in

There's no close single-malt substitute for CaraPils/Carafoam's specific dextrin contribution — flaked oats or flaked barley can help with body and head retention through a different mechanism, but neither replicates its particular combination of near-zero colour and flavour with real body impact. Brewers troubleshooting a thin-bodied beer sometimes reach for more base malt instead, which raises gravity and alcohol along with body — not the same fix, and not always what the recipe actually needs.
