If a recipe just says "crystal malt" or "caramel malt" without a Lovibond number attached, Crystal 40L is the safest guess — it's the most commonly stocked, most frequently called-for member of the whole crystal malt family, and functions as the default caramel addition the way Pale 2-Row functions as the default base malt.
How it's actually made
Crystal malt is stewed rather than dry-kilned: held wet and hot in a rotating drum long enough for the grain's own enzymes to convert its starch to sugar inside the still-moist husk, with that sugar solution caramelising as temperatures climb further. That process is also why crystal malt carries no diastatic power — the enzymes that do the converting are used up and denatured in the process, leaving a malt that's already fully converted before it ever reaches a mash tun. It can be steeped on its own in hot water rather than mashed, which is exactly how extract brewers add specialty grain character without a full all-grain mash.
Colour and flavour at 40L
At 35-47 °Lovibond, Crystal 40L reads a solid amber-orange with real caramel and light toffee character and a hint of raisin at the top of its range — noticeably more assertive than Crystal 20L, but well short of the deep dried-fruit intensity of Crystal 80L or 120L. At its typical 41 °L colour, 1 lb (0.45 kg) added to a 9 lb (4.1 kg) pale-base 19 L (5 gal) batch reads about 7.9 SRM once run through the SRM colour calculator — a clear amber lift on its own.
The overuse mistake
Crystal 40L is also the crystal malt most likely to be overused, precisely because it's the default choice: a recipe that layers a heavy Crystal 40L addition on top of already-malty base malt, or that pushes well past the conventional 10% ceiling chasing more caramel character, tends to land cloying rather than balanced. The fix is rarely "more crystal malt" — a beer that reads thin on malt character usually needs more base malt or a different specialty malt entirely, not a bigger dose of the same one.
Typical use
American amber ale and ESB are the styles most built around Crystal 40L specifically, and it appears as a smaller supporting addition in a huge range of other ale styles wanting a caramel note without a deep, dark-fruit intensity — brown ales, many pale ales, and a wide swath of homebrew club "house recipes" that reach for it as the default caramel choice.
Extract brewers use it exactly the same way
Because it needs no mashing, Crystal 40L is one of the most common specialty grains in extract-with-steeped-grains recipes — steeped in hot (not boiling) water for 20-30 minutes, strained out, and added to the extract-based wort. The main risk at steeping temperatures much above about 170°F (77°C) is extracting tannin and astringency from the husk, the same risk a full-grain mash runs at oversparge temperatures; a covered steep well under boiling avoids it.
Why "default" doesn't mean "safe to eyeball"
Its ubiquity sometimes leads new brewers to treat Crystal 40L as a fixed, always-right amount rather than a variable worth actually calculating — a beginner recipe printed with "1 lb crystal malt" doesn't scale automatically to a 10-gallon batch or a significantly bigger grain bill, and blindly keeping the weight fixed while the rest of the recipe grows under- or over-shoots the intended balance. Scaling it with the rest of the grist, not leaving it as a round, memorised number, keeps the beer consistent across batch sizes.
Substitution
Crystal 20L works as a lighter substitute at a somewhat higher percentage if a subtler result is acceptable; Crystal 60L in a smaller quantity gets closer to 40L's character than most brewers expect, since crystal malt's flavour intensity scales faster than its Lovibond number alone suggests.
