Crystal 20L: The Subtle End of Caramel Malt

Crystal malt isn't made the way base malt is made. Instead of the dry kilning that finishes an ordinary base malt, crystal (caramel) malt is stewed — held wet and hot in a rotating drum long enough for the malt's own enzymes to convert its starch to sugar right there inside the still-soaked husk, and that sugar solution then caramelises as the temperature rises. The process both converts and caramelises the grain in one step, which is why crystal malt carries no meaningful diastatic power of its own: the enzymes that would normally convert starch during mashing have already done their one job and denature.

What "no diastatic power" actually means for a recipe

Because it arrives already converted, crystal malt doesn't need mashing to become usable — it can be steeped directly in hot water, which is exactly why extract brewers can add specialty grains like this one without doing a full mash. In an all-grain batch it still needs a base malt alongside it with enough enzyme margin to convert anything else in the grist, but Crystal 20L itself isn't contributing to that conversion job at all.

The lightest step on the ladder

At 15-25 °Lovibond, Crystal 20L sits at the pale end of the crystal malt family, contributing a light caramel character with mild sweetness rather than the deeper toffee or dried-fruit notes its darker siblings (40L, 60L, and beyond) bring. A pound (0.45 kg) of the typical 20 °L version, mashed with 9 lb (4.1 kg) of ordinary pale malt for a 5-gallon (19 L) batch, reads around 5.7 SRM once the grain bill is run through the SRM colour calculator — a light amber lift, not a dramatic colour shift.

Where the 10% ceiling comes from

Crystal 20L's conventional ceiling, around 10% of the grist, isn't about enzyme content since it has none to worry about — it's about flavour balance. Push past it and the caramel sweetness starts to compete with hop character or a clean base-malt profile rather than rounding it out, which is the opposite of what a light crystal malt is usually added for.

Where it's used

This is the crystal malt reached for when a brewer wants just a hint of roundness and colour lift — a session pale ale, a light American amber, or any recipe where a heavier crystal malt would push the beer's sweetness further than intended. It's a subtler tool than its more assertive relatives, and that subtlety is the entire point of choosing it over Crystal 40L or 60L.

Fast in the mash, forgiving in a recipe

Because its sugars are already formed rather than locked up as starch, Crystal 20L dissolves quickly once it's in hot water — there's no real risk of under-extracting it the way a brewer might worry about under-converting a base malt. That also means the exact mash schedule around it barely matters to Crystal 20L itself; it's along for the ride during whatever mash the base malt needs, contributing its sugar regardless of temperature or rest length.

A Lovibond range, not a fixed number

Different maltsters' Crystal 20L products don't all land on exactly the same colour or sweetness even at a shared nominal Lovibond rating — a recipe that specifies a precise figure from one maltster's spec sheet is giving an approximation when brewed with a different maltster's bag of the same nominal product. Treating the published range as a planning figure, and expecting some batch-to-batch variation regardless of brand, is the realistic way to work with any crystal malt rather than just this one.

Substitution

CaraPils/Carafoam is sometimes confused with a pale crystal malt because of the shared "cara" naming convention, but it isn't stewed the same way and contributes body and head retention rather than caramel sweetness — it is not a substitute for Crystal 20L's actual flavour role. Crystal 40L is the nearest substitute when a slightly more pronounced caramel character is acceptable; using less of it than the recipe calls for Crystal 20L keeps the colour and sweetness contribution roughly comparable.

Similar malts
