Kölsch is one of the few beer styles in the world with actual legal protection: the Kölsch Konvention, an agreement among Cologne's breweries dating to 1986, restricts the name to beer brewed in and around Cologne to a defined specification — everywhere else, including on this page, "Kölsch-style" is the more accurate term for a beer built to the same recipe outside that protected region.
An ale brewed like a lager
Kölsch is fermented with genuine ale yeast, but at unusually cool ale-fermentation temperatures and typically followed by a period of cold conditioning that mirrors lagering — technically an ale by yeast species, but built through process to land closer to a clean lager's character than to a typical warm-fermented ale. That makes it a close cousin of Cream Ale in philosophy (ale yeast pushed toward lager-like cleanliness through cool fermentation and cold conditioning), though the two developed independently on opposite sides of the Atlantic and land on noticeably different final flavor profiles.

A standard ale fermentation temperature (68-72°F/20-22°C) produces noticeable fruity ester character that genuine Kölsch shouldn't have — the style calls for fermentation on the cool end of typical ale range, often 60-65°F (15-18°C), followed by several weeks of cold conditioning (a "lagering" period even though the yeast is ale yeast) before the beer is considered finished. Skipping that cold-conditioning step, even with correctly cool primary fermentation, leaves a rougher, less refined beer than the style is capable of.
The glassware is part of the tradition, not an afterthought
Cologne's Kölsch tradition includes a specific, narrow cylindrical glass called the "Stange" (literally "rod" or "pole"), traditionally around 200 ml, served on a round tray called a Kranz and refilled continuously by staff until a drinker places a coaster over the empty glass to signal they're done — a serving ritual as codified as the beer's brewing specification itself. It's not something a homebrewer needs to replicate to brew the style correctly, but it explains something real about the beer: a small, quickly-refilled pour is exactly matched to a beer built to be crisp and fresh-tasting on every glass, rather than one meant to be nursed slowly the way a stronger or more characterful style might be.
