CO2 Volumes by Style Chart

"Carbonation" isn't one target — different beer traditions developed genuinely different expectations for how lively a beer should feel, shaped by serving vessel and brewing tradition as much as by the beer's ingredients. This is the range each style family is traditionally conditioned to, independent of the arithmetic for hitting it (see priming sugar CO2 targets by style for the sugar-dose side of the same question).

The ranges, low to high

  • Traditional British cask ale: 1.0-1.5 volumes. Barely carbonated by American standards — cask ale is meant to feel soft and still, with texture coming from temperature and hand-pulled dispense rather than dissolved gas. Bottled British-style ales (bitter, mild, brown ale) run a bit higher, typically 1.5-2.0 volumes, since there's no cask conditioning to fall back on.
  • Most American and English ales: 2.2-2.7 volumes. The broad middle of the range — pale ales, IPAs, porters, most amber and brown ales — carbonated enough to feel lively without dominating the beer's texture.
  • Most lagers: 2.4-2.8 volumes. A touch higher than the typical ale range, consistent with lager's traditionally crisper, more effervescent character.
  • Belgian ales: 2.5-3.5 volumes, and Belgian golden strong ales specifically can run as high as 3.0-4.5 volumes — genuinely some of the most heavily carbonated beer styles in regular production, part of why Belgian tradition favours thick, champagne-style bottles that can hold that pressure safely.
  • German wheat beers (hefeweizen, weissbier): 3.3-4.5 volumes. The other end of the traditionally high-carbonation styles, giving the style its characteristically big, dense, long-lasting foam.

Where the safety ceiling sits relative to these ranges

Most homebrew references treat roughly 3.5 volumes as the safe ceiling for standard glass bottles — beyond that, the risk of a bottle failing under its own internal pressure rises meaningfully. Look back at the ranges above: British and American styles sit comfortably under that ceiling with room to spare, but the upper end of Belgian golden strong and hefeweizen targets sits at or past it. This isn't a coincidence — it's exactly why those specific traditions use thicker, champagne-rated bottles rather than standard ones. Putting a target into an actual sugar dose
