Too much priming sugar means too much dissolved CO2, and too much dissolved CO2 in a sealed glass bottle is a genuine safety issue, not just an inconvenience — over-carbonated bottles gush uncontrollably when opened, and in the worst case can rupture under their own internal pressure. This is the one calculation on this whole site where getting it wrong can hurt someone, so the arithmetic is worth taking seriously rather than eyeballing.
What "too much" looks like in real numbers
A standard 5-gallon (18.9 L) batch primed for a normal 2.4-volume target needs 116.7 g of corn sugar. Push the target to 5.0 volumes — roughly double a normal ale target — and the same batch needs 314.0 g, well over double, because the calculation is dosing for the difference between residual and target CO2, and that difference itself has grown. The calculator flags this dose explicitly: most homebrew references treat roughly 3.5 volumes as the safe ceiling for standard (non-champagne-rated) glass bottles, and a 5.0-volume target sits well past it.
Why this happens even to careful brewers
The most common real-world cause isn't a brewer deliberately targeting a huge number — it's priming twice by accident: adding a calculated dose of priming sugar at bottling, but the beer was already partially carbonated from a warm spell, or the brewer forgot the beer had already been force-carbonated in a keg before some of it was bottled, or a batch that appeared "still" was actually still actively fermenting and had unfermented sugar left to consume on top of the added priming dose. Any of these stacks unplanned CO2 on top of a normal, correctly-calculated priming addition. Doubling a recipe's sugar "to be safe" is another one — more sugar does not mean more reliable carbonation, it means a higher and less predictable pressure.
The safe course, in order
- Never guess at a target above roughly 3.0 volumes without using champagne-rated bottles (which are built for standing well above 6 atmospheres of internal pressure) or, better, a keg with a controlled regulator, for anything genuinely needing style-authentic high carbonation like a Belgian tripel or a hefeweizen — see what CO2 volume should a hefeweizen have.
- If you suspect a batch is already over-primed and still conditioning, move it somewhere cold immediately — cold temperature slows the ongoing carbonation reaction and reduces internal pressure — and open bottles carefully over a sink or outdoors, pointed away from your face, the first time.
- Store any suspect batch away from where people walk past it regularly. A failing bottle under pressure is a real glass-shrapnel hazard, not just a mess.
- If in doubt, prime for less rather than more.
