Extremely high, extremely reliable attenuation

At 90-100% attenuation, EC-1118 finishes drier than nearly every strain covered on this site, and it does so consistently even from a genuinely high original gravity — a real, tested trait rather than an optimistic upper-range number. Why some mead makers deliberately avoid it

Nutrient demands at high gravity

Pushing EC-1118 to its full attenuation potential on a genuinely high-OG mead or cider generally requires staggered yeast nutrient additions rather than a single dose at pitching — a nitrogen-starved fermentation, even with a robust strain like this one, risks producing hydrogen sulfide or other stress-related off-aromas despite the yeast's overall hardiness. Following a staggered nutrient schedule (adding small doses at multiple points during active fermentation rather than all at once) is standard practice among experienced mead makers using EC-1118 for a strong batch.

Its usual assignments

High-ABV mead, cider, and sparkling wine bases are EC-1118's clearest homes, along with its specific role as a rescue strain for a fermentation that's stalled with another yeast already pitched. Low flocculation means it doesn't clear especially fast on its own, so a finished high-ABV batch generally still benefits from extended cold-conditioning or fining time regardless of how reliably and completely the fermentation itself finished its work over the whole course of the process, from the initial pitch all the way through to final gravity.
