Munich Malt II — often labelled 20L, to distinguish it from paler Munich Malt I (10L) and darker Munich Malt III (30L) — pushes the Munich malting process a step further into deeper colour and richer flavour, and that extra kilning comes at a direct cost to diastatic power. Where Munich Malt I still carries a comfortable enzyme margin, Munich Malt II's diastatic power drops to around 20 °Lintner, thin enough that maltsters and brewing references commonly cite a 60% grist ceiling for it rather than treating it as a full-strength base malt the way Munich I is treated.
Why the ceiling exists, in real numbers
The 60% figure reflects the point where a grist built mostly on Munich Malt II starts running short on the enzyme margin needed for reliably complete conversion, especially if the rest of the grist is itself low-diastatic specialty or crystal malt contributing nothing to that enzyme pool. Blend 6 lb (2.7 kg) of an 18 °L Munich II with 4 lb (1.8 kg) of Pilsner malt — restoring enzyme headroom rather than relying on Munich II alone — and that same 5-gallon (19 L) batch comes out to about 12.6 SRM on the SRM colour calculator, which is roughly the depth a Dunkel or dark bock is aiming for without pushing the enzyme margin anywhere near its limit.
Colour and flavour at the top of its range
At 15-22 °Lovibond, Munich Malt II sits well into brown territory — noticeably darker than Munich I and closer to what a light American brown ale or a strong Dunkel might use as its primary malt character. Flavour intensifies correspondingly: deep malty richness, strong toast, and a more pronounced mild-caramel edge than Munich I shows.
Where it's used
Munich Malt II shows up most often as a substantial partial addition — 20-50% of the grist — in Dunkels, bocks, and dark lagers wanting more intensity than Munich I provides, and occasionally at smaller percentages in brown ales or Scotch ales looking for deep malt character without reaching for crystal malt's caramel sweetness. It's rarely used as the sole base malt, precisely because of the conversion-margin issue above.
The decoction connection
Munich Malt II sits close to the historical malt that made decoction mashing standard practice in Bavaria: older, less-modified dark Munich malts genuinely needed the repeated boiling-and-returning of a mash portion to convert reliably and to build body. Modern, well-modified Munich Malt II doesn't strictly require decoction to convert — a single-infusion mash with adequate enzyme margin handles it fine — but many traditionalist brewers still decoct a Munich-II-heavy Dunkel or bock specifically for the extra melanoidin development decoction produces, which a straight infusion mash can't fully replicate even with identical grain.
Blending is standard practice, not a workaround
Brewers building a recipe around a high percentage of Munich Malt II commonly pair it with Pale 2-Row, Pilsner malt, or another high-diastatic-power base to restore enzyme headroom, rather than relying on Munich II's own diastatic power to carry the whole mash. This is normal practice for a lower-enzyme, high-flavour malt, not a sign anything is wrong with the recipe.
Munich Malt I plus a small crystal malt addition can approximate Munich II's colour and some of its richness while keeping the mash's overall enzyme margin higher, which is often the safer substitution when Munich II specifically isn't on hand.
