Acidulated Malt (Sauermalz in German brewing tradition) is regular base malt that's been deliberately soured during malting — held wet at a warm temperature specifically to let naturally occurring lactic acid bacteria produce lactic acid on the grain, before kilning halts the process and locks that acidity into the finished malt. What a brewer gets is a base malt that lowers mash pH simply by being part of the grist, rather than a flavour or colour specialty grain.
Why brewers reach for it over liquid acid
Adjusting mash pH with food-grade lactic or phosphoric acid works, but it requires careful measurement and a pH meter to avoid over- or under-shooting the target — a real source of error for brewers without reliable equipment. Acidulated Malt offers a more self-limiting alternative: because its acidity is fixed per unit weight rather than variable per drop, a brewer can dose it as a percentage of the grist using published guidelines, and the acid is distributed through the mash rather than added as a concentrated liquid that needs even mixing.
How much it actually moves pH
As a rough rule some homebrewing references cite, each percent of Acidulated Malt in the grist lowers mash pH by a small, fairly predictable increment — enough that a typical 3-5% addition can meaningfully correct a mash running high, particularly with naturally alkaline water or a very pale grain bill that doesn't contribute much of its own acidity. The exact effect still depends on water chemistry and the rest of the grain bill, which is why checking mash pH directly with a meter or reliable strips remains the more precise method regardless of how the acidity gets there.
No meaningful colour or flavour at typical doses
At 2-4 °Lovibond, Acidulated Malt contributes almost no colour, and at the modest percentages used for pH correction its flavour impact is subtle — a very mild tartness that most drinkers wouldn't identify as "sour" in a beer using it purely for pH adjustment rather than flavour.
Where the ceiling comes from, and when it's crossed on purpose
The conventional 10% ceiling reflects the point where Acidulated Malt's contribution shifts from "pH correction" to "flavour ingredient" — some Berliner Weisse and other intentionally sour styles use it well above typical pH-adjustment doses specifically for its tartness, a deliberate flavour choice rather than a water-chemistry fix.
No diastatic power to speak of
Acidulated Malt carries little meaningful diastatic power of its own and depends on the rest of the grist's enzyme margin to convert, the same as most specialty grains — at the small percentages typically used for pH correction, this is rarely a practical concern.
Why it's popular with water-chemistry beginners
Acid additions and water salts together intimidate a lot of brewers newer to all-grain, and Acidulated Malt offers a lower-stakes entry point into pH management than measuring liquid acid drop by drop — treating it as "just another grain in the bag" rather than a chemical addition requiring its own careful dosing. It isn't a substitute for eventually learning to read a mash pH reading directly, but it lowers the cost of a mistake while a brewer is still building that skill.
If a pH meter isn't in the toolkit
Food-grade lactic acid or phosphoric acid, dosed carefully against a measured mash pH, is the direct substitute for pH-correction purposes; there's no substitute for Acidulated Malt's specific self-limiting, measurement-free convenience, which is exactly why brewers without a reliable pH meter often prefer it over liquid acid regardless.
