Cascade Hops: Alpha Acid, Aroma & Substitutes

Cascade is the hop most responsible for what "American craft beer" tastes like. Released by the USDA's Oregon breeding program in 1972 — a cross of English Fuggle and the Russian landrace Serebrianka — it sat mostly unused for most of a decade until Sierra Nevada built its 1980 Pale Ale around it, and from there Cascade became the default hop of the entire American pale ale and early IPA movement. It's a public, non-proprietary variety, which means any grower can plant it, and most Pacific Northwest hop farms do.

Alpha acid and why the range is so wide

Cascade's published alpha acid range, 4.5-9%, is one of the widest of any commonly grown hop — a single crop year's difference in growing conditions can move a lot from the low end to nearly double that. This matters more for Cascade than for most varieties: a bittering charge sized off a midpoint assumption when the actual lot reads 4.5% will under-bitter a beer noticeably, and the reverse over-bitters it. Checking the Certificate of Analysis on the bag in hand, then running the real number through the IBU calculator, matters more with Cascade than with a tighter-range hop like Nelson Sauvin.

Grapefruit before "grapefruit hop" was a category

Grapefruit is Cascade's signature note — sharper and more citrus-pith-forward than the softer orange of Amarillo — backed by floral and lightly spicy background notes. It reads cleaner and less overtly tropical than the modern proprietary varieties (Citra, Mosaic) that have partly displaced it in newer hazy IPA recipes, which is part of why Cascade still defines "West Coast" hop character specifically, as distinct from the fruit-candy register of more recent releases.

Where it's used

Cascade anchors American pale ale as a style almost by definition, and shows up heavily in West Coast IPA, both as a late-boil and dry-hop addition and, at the higher end of its alpha range, as a workable bittering charge. It's also a common late addition in American amber ale and even some American wheat beers looking for a citrus lift without tropical fruit character.

Centennial and Amarillo, not interchangeable

Centennial is the closest single substitute — often described as "Cascade turned up," with a similar citrus-floral base at meaningfully higher alpha acid, so a swap needs a lower hop weight to land the same bitterness. Amarillo is the second common substitute, trading Cascade's sharper grapefruit for a rounder orange-grapefruit blend with a softer floral edge. Neither replicates Cascade exactly — Centennial reads more resinous at high dry-hop rates, Amarillo reads sweeter — but both land in the same citrus-forward American aroma-hop family.

Sourcing

Because it's public domain and grown at scale across Washington, Oregon and Idaho, Cascade is rarely hard to find and rarely commands a premium the way single-farm proprietary varieties like Amarillo or El Dorado do. That availability, combined with its wide alpha range, means two bags of Cascade bought a year apart can genuinely brew a different beer if the lot's alpha acid isn't checked before the boil is calculated.

Wet-hop and harvest use

Cascade's broad availability and quick, punchy citrus character also make it a common choice for wet-hop (fresh-hop) beers brewed at harvest time, when hops go straight from the bine into the kettle without kiln-drying. Fresh Cascade tends to read grassier and less concentrated than the dried version, since roughly 75-80% of a fresh cone's weight is water that's normally removed before packaging — recipes built around wet Cascade typically use four to six times the dry weight to account for that difference, and skip a long boil addition entirely in favor of a large late or whirlpool charge to preserve the more delicate fresh-hop aroma.
