A beer that looks darker than your recipe calculator predicted usually isn't the calculator being wrong about your grain bill — it's the Morey equation's own known limitation showing up. SRM formulas estimate colour from grain weight and Lovibond rating alone; they don't model everything that actually darkens beer during the brew day.
What the formula does and doesn't account for
For a grain bill of mostly pale 2-row (4.3 kg at 3 °L) with a light crystal addition (0.3 kg at 40 °L) in a 19 L batch, the Morey equation predicts roughly 7.7 SRM — a pale amber. That number is a real, useful estimate — but the SRM calculator's own documentation is explicit that the Morey equation doesn't account for boil-driven darkening, mash pH, or long boil times, and real finished beer can run visibly darker than the formula predicts, especially on a long boil or a high-melanoidin mash.
The real, non-calculator causes worth checking
- Boil length and intensity. A longer or more vigorous boil than the recipe assumed drives more Maillard browning (the same chemistry that browns bread crust) into the wort — see does a longer boil darken beer for how much this genuinely moves the needle versus how much is folklore.
- Mash pH running high. Wort produced from a mash outside the typical 5.2-5.6 pH range tends to extract more tannin and colour compounds from the grain husks, independent of what the grain's own Lovibond rating says it should contribute.
- Scorching during the boil. Direct-fire kettles with poor circulation can scorch wort against the bottom, especially on high-extract or high-adjunct boils — this contributes real, measurable darkening the SRM formula has no way to see coming, because it isn't a grain-bill effect at all.
- A substituted or mislabelled specialty grain. A crystal malt or roasted grain from a different batch or maltster than the recipe assumed can carry a meaningfully different Lovibond rating even under the same product name — see the malt reference for the typical published range per malt type, and note that it's a range, not a fixed figure.
- Oxidation during storage. Beer genuinely darkens somewhat over months in the bottle or keg through slow oxidative reactions — a beer that looked right at bottling and looks noticeably darker six months later is showing age, not a brew-day mistake.
Judge the process before you judge the recipe
If the beer still tastes right and the colour is only somewhat off from what you expected, it's very likely one of the process factors above rather than a flawed grain bill — note what you changed (boil length, kettle, mash pH) for next time rather than assuming the recipe itself needs adjusting. If the colour is dramatically off — a beer that should read pale amber but looks nearly black — check the actual weight and identity of every specialty grain that went in the mash tun first; see how much roasted barley makes a beer black for how little a heavily-roasted grain it actually takes to move SRM by a large margin.
