What Is a Good Bitterness-to-Gravity Ratio?

Two beers with wildly different IBU numbers can both taste perfectly balanced, and two beers with the same IBU can taste completely different in how bitter they come across — because perceived bitterness depends on how much bitterness there is relative to how much malt sweetness is there to balance it. BU:GU (bittering units to gravity units) is the ratio that captures this: total IBU divided by gravity points ((SG - 1) x 1000).

Two real examples at opposite ends

A session ale — 15 g of 8% alpha hops at 60 minutes in a 19 L batch at 1.040 boil gravity — computes to roughly 15.9 IBU and a BU:GU of 0.40. Check it here. A double IPA — two 40 g additions of 14% alpha hops, one at 60 minutes and one at 5 minutes, same 19 L batch but at 1.075 boil gravity — computes to roughly 65.1 IBU and a BU:GU of 0.87. The double IPA's raw IBU is more than four times the session ale's, but its BU:GU — the figure that actually predicts perceived balance — is only a bit more than double, because the DIPA's much higher malt sweetness is absorbing a proportionally larger share of that bitterness.

Rough guide to what a BU:GU number implies

  • Below roughly 0.3-0.4: malt-forward, bitterness plays a supporting role — most brown ales, milds, and lower-gravity Belgian styles land here.
  • Roughly 0.4-0.6: a reasonably balanced middle ground — many pale ales, ambers and session IPAs sit in this band.
  • Roughly 0.6-0.9: hop-forward, bitterness clearly leads — where most American IPAs and imperial/double IPAs land.
  • Above roughly 0.9-1.0: aggressively bitter relative to the beer's strength — intentional in some West Coast-style IPAs, but worth double-checking against the style you're targeting if it wasn't intentional.

These bands are a rough guide from general brewing convention, not a hard rule — plenty of excellent beers sit outside them deliberately, and style tradition varies (a traditional English bitter and an American pale ale can share a similar BU:GU while tasting quite different for other reasons entirely).
