Is 1.010 a Good Final Gravity?

FG 1.010 isn't good or bad on its own — it's only meaningful next to the OG it came from, because the same final reading implies wildly different attenuation depending on where fermentation started.

The same FG, three different verdicts

  • From OG 1.044: 1.010 is 77.3% apparent attenuation — comfortably normal for most American ale strains, which commonly run 73-80%. Nothing to worry about here.
  • From OG 1.050: 1.010 is 80.0% apparent attenuation — on the higher end of normal, consistent with a clean, well-attenuating strain and a fermentable wort, still well within reason for many strains.
  • From OG 1.070: 1.010 is 85.7% apparent attenuation — unusually dry for most ale yeast. A handful of strains (certain saison and some kveik strains, and most wine and mead yeasts) attenuate this far routinely, but a typical American or English ale strain finishing this dry from this OG is worth a second look rather than assuming it's simply a great ferment.

What "too dry" from a given yeast can mean

If your strain isn't normally rated this high and it finished unusually dry anyway, the likely causes are a highly fermentable wort (a mash run cool, producing more fermentable sugar than a typical mash temperature would), an infection introducing wild yeast or bacteria with much higher attenuation than the pitched strain, or genuinely just a strain performing at the top of its natural range under favourable conditions — healthy pitch, good aeration, steady fermentation temperature. Taste is the tiebreaker here: an unexpectedly dry beer that tastes clean is very likely a strong, healthy ferment; one that tastes sour, off, or noticeably different from what the recipe should produce is worth investigating as a possible contamination.

What "not dry enough" would look like instead

Using this to plan forward, not just diagnose

If a specific FG matters to you — a lighter, crisper beer wants a lower FG relative to OG; a fuller, sweeter one wants to finish higher — that's set upstream by mash temperature and yeast selection, not adjustable after the fact once fermentation is done.
